
May is here and it is time to get outdoors. It’s been a crazy spring – I swear the weather Gods can’t decide if they are done with winter or not. One day it’s beautiful out and the next day there is snow on the ground. I can’t wait to go on my first warm weather bike ride. There is nothing better than a breeze blowing in your face and the sun beating down on your skin. I’m excited because this year I will be riding in Washington state and for those of you who have never been here, I can honestly say it doesn’t get much better than Washington in the summer. It is truly breathtaking. I look forward to riding the centennial trail and taking it off road as well to see the many waterfalls hidden in the untouched wilderness that Eastern Washington has to offer. Stay tuned – I’ll provide pictures of my spring adventures!
One of my favorite pastimes, when I’m not swimming, biking or running is camping. I hope to get out and camp as much as possible this summer. One of my main focuses this winter was strength training. When the summer rolls around and you spend less time in the gym sometimes your strength training regimen takes the back seat. I recently purchased the TRX training system to take with me on the road this spring. The system was created by a Navy Seal who was often out in the wilderness for extended periods of time and he wanted to ensure he was staying as active and strong as possible. He used what he had (parachute cords) to help leverage his own body weight through resistance training. The system is made up of resistance bands that can simply be braced on a tree or pole. I’m excited to see if the system builds my overall fitness and appetite!
Speaking of appetite, when I think of camping, I think of campfire cooking. Grilling is one of the best ways to prepare your food and spring is the time to take advantage of your grill. Grilling your meat allows the excess fat to drip off rather than be soaked up. Take advantage of your local farmers markets and eat all the fresh veggies and fruits that spring and summer offers. One of my favorite spring time meals is Chicken Fresca Tacos. What are some of your favorites?
Ali’s Easy Chicken Fresca Tacos
Grill skinless, boneless chicken breast rubbed with a little pepper and cumin
Grilled sliced bell peppers, onions, and summer squash
Warm corn tortillas
Top with shredded cabbage, avocado, and salsa
Fresca Salsa
In a food processor add tomatoes, onions, jalapenos, cilantro and lime juice to taste
Enjoy with family and friends!
